As August settles over Blowing Rock, we are reminded of how much a restaurant becomes part of the memories people associate with a place. For some guests, The Speckled Trout is somewhere they return whenever they visit the mountains, a familiar stop that has gradually become part of their family's traditions. Others discover us while exploring Main Street and find themselves enjoying an experience they had not planned. We appreciate both kinds of visits because they reflect something we have always believed: the best hospitality feels personal, whether someone has been coming through the door for years or is joining us for the very first time.
Our summer menu is designed to offer a range of experiences, from familiar Southern favorites to dishes that introduce something a little unexpected. A table might begin with Smoked Trout Boursin, served in crisp phyllo cups with caper, red onion, and cucumber relish, while another group shares Hoe Cakes and Sorghum Butter or Mojo Wings. These dishes are enjoyable on their own, but there is also something appealing about ordering a few different things and allowing everyone to discover what they like. Sharing food creates a natural sense of connection, and sometimes a new favorite begins with someone insisting that you try a bite of whatever they ordered.
The main courses offer just as much variety. Carolina Mountain Trout remains one of our signature offerings, with seven different preparations that allow guests to enjoy a familiar ingredient in different ways. The Fieldsman Plate brings together sofrito brined grilled chicken thighs, smoked gouda grits, collard greens, and roasted apple bourbon beurre blanc, while Mushroom and Ricotta Ravioli features chestnut and pioppino mushrooms from High Country Fungi with roasted garlic, garden herbs, and vermouth cream. The menu reflects our appreciation for Southern food traditions while leaving room for different tastes, preferences, and culinary influences.
The bar adds another dimension to the experience, particularly for guests who enjoy discovering something beyond their usual order. Our summer cocktails include familiar classics alongside original creations such as Coming Up Roses, Solstice Summit, and Angler's Choice. There is also Surprise Me, an option that allows guests to share their preferences and let the bartender create something suited to their tastes. It is a small example of how hospitality can become more personal when there is room for conversation and a little curiosity.
