An Evening at the Table: A Private Wine Dinner

There’s something special about gathering around a table in the High Country, slowing things down, sharing a meal, and letting the evening unfold course by course.

At The Speckled Trout Restaurant & Bottle Shop, we’re bringing that spirit to life with a private wine dinner designed to connect food, wine, and community in a way that feels both elevated and deeply rooted.

On Wednesday, May 20th, Emily & Erica Brinker invite you to join us for a four-course wine pairing experience that leans into thoughtful preparation, curated selections, and storytelling that carries throughout the night.

The Experience

This is more than a dinner. It’s a guided evening built around intention. Each course has been crafted to complement the next, with wines selected from our Bottle Shop to enhance, contrast, and elevate every bite. Expect a pace that allows you to settle in, explore, and enjoy the full experience from start to finish.

Seats are limited, creating a more intimate setting where every detail matters and every guest is part of the story.

The Menu

We begin with a small bite that sets the tone for the evening:

Honey-Soaked Buttermilk Blue Cheese Mousse
Phyllo cups, brûléed apples, chives

From there, the courses unfold:

First Course
Sorghum and rose petal glazed pork belly, sweet pea purée, grilled peach, ricotta-stuffed crêpe
Paired with Galoche Rouge, a French Gamay that brings brightness and balance to the richness of the dish

Second Course
Grilled sweet corn and leek velouté, spinach fraîche, pomegranate seeds, pea shoots
Paired with Monte Rio Rosé from California, offering freshness and lift alongside the chilled soup

Third Course
Roasted trout napoleon featuring North Carolina rainbow trout layered with grilled eggplant, roasted red peppers, basil, and tomato, wrapped in Swiss chard, served over Israeli couscous with butternut squash and vermouth beurre blanc
Paired with B. Millet Sancerre, Loire Valley

We close the evening with a trio of desserts designed to round things out with a touch of indulgence:

Dessert Trio
Lemon curd tartlet with fresh fruit
Bittersweet chocolate tartlet with pistachio or hazelnut
Salted caramel tartlet with sea salt and bacon crumble
Paired with Passerine Blanc de Blancs Brut, France
